The glorious fall days we have had in September and October are coming to an abrupt end this week. High’s in the 50’s and 40’s, wind, rain, ice and just plain old yucky weather are forecasted all week. We knew we had it too good. Three weeks without rain and highs in the 60’s and 70’s are just plain crazy this time of year in Minnesota. Farmers are two or three weeks ahead of harvest here. And compared to last year, where it rained/snowed all of October, we are grateful for the beautiful weather thus far.
This cold weather calls for comfort food. Yesterday, I made one of Tim’s favorite dishes, meat loaf. I am not a huge meat loaf fan. In fact, I wouldn’t really eat it until Tim and I got married and I started making it for him. I have found over the years, that is it hard to screw up meat loaf. All you really need are two pounds ground beef, 1 cup bread crumbs and an egg. The rest of the ingredients are just filler and flavor. Also, those of you who are buying bread crumbs, stop. You can grind up slices of stale bread in your coffee grinder, food processor or blender. Save the money and the salt.
Here is my Pantry Meat Loaf recipe:
Besides the beef, bread crumbs and egg, you can mix and match your favorite ingredients or whatever you can find in the pantry.
- 2lbs Zweber Farms Ground Beef
- 3 slices bread made into crumbs
- 1 cup Organic Valley milk
- 1/2 cup onion or 1 tablespoons onion powder
- 2 tablespoons chopped parsley
- 1 egg beaten
- 1 tbls Ketchup
- 1tbls mustard
- 1 teaspoon salt
- 1/4 teaspoon pepper
Mix all ingredients thoroughly and press into a loaf pan, or shape into loaf. Bake at 350 for 1.5 hours (until meat is no longer pink) Remove from oven and drain off excess fat.
Serve with green beans, crusty bread and a tall glass of milk. Serves 6.
