Easy Frittata Recipe

 

I am in LOVE with my new cast iron skillet! I have had a cast iron dutch oven for a while now and have loved that too. Tim did really well at Christmas and surprised me with a 12 inch skillet. Then my parents gave me a 10 inch skillet! Oh, all the cast iron love!

I have been cooking up a storm in both my skillets. This weekend I made an easy frittata that is also healthy. Here is how I did it.

Easy Frittata Recipe

  • Eight Zweber Farm eggs
  • Half cup real milk (I choose milk from our farm’s Organic Valley cows)
  • Veggies (such as onions, sweet peppers)
  • Soft veggies and greens (such as spinach and tomatoes)
  • Half cup shredded cheese (I like Organic Valley)
  • Salt and pepper to taste
  • 1 tablespoon Organic Valley butter

Preheat your oven to 375 degrees

First mix your eggs, milk and salt and pepper.

 Next melt your tablespoon of butter in your cast iron skillet and saute your veggies.

Then add your eggs to the pan and let them cook for about 2-3 minutes.

Then top with your soft veggies and cheeses.

Transfer your skillet in the oven and bake 5-10 minutes until eggs are set.

Finished! You Easy frittata is ready to serve.

You can mix and match your veggies and toppings to your taste. You could add Zweber Farm bacon or sausage too. I would mix them in with the eggs. As you can see our kids don’t like the spinach, so I made a kid side and an adult side.
