Healthy 4th of July Popsicles

I love making healthy 4th of July popsicles every year. We don’t necessary celebrate the 4th of July on the 4th. As dairy farmers, we don’t get the day off. Our celebrations happen when our local race track celebrates. We have a race car track in our town. Every Saturday night we hear the zoom, zoom of race cars. They don’t bother us and usually are done by 10 p.m. (unless there are crashes).

The best part of the race tack is 4th of July fireworks. Unless the 4th lands on a Saturday, fireworks are on the Saturday before Independence Day. This year we had fireworks on this past Saturday.

I love fireworks night. I buy glow sticks for the kids and they go out and hunt fireflies while we wait for the event. From our deck we have a front row seat. Caught fireflies usually illuminate our deck table, and we snuggle together watching the fireworks and listening to the patriotic music.

Another favorite part of fireworks night is our healthy and organic snacks. I traditionally make healthy 4th of July popsicles. These popsicles are made with Stonyfield yogurt, fresh or frozen organic fruit, a splash of Organic Valley milk and a bit of honey.

Blend all the ingredients together and wait for them to freeze in the mold.

The only dilemma with these healthy yogurt popsicles is that they may get a little messy 🙂
