Hunk of Meat Monday: Savory Pork Roast

Last night I made one of the most tasty and easy pork roasts of my life. I found it on AllRecipes.com (my favorite recipe website).

The recipe calls for a boneless pork roast, but I used a 2 lb bone-in roast and it turned our beautifully. I did not change the temp or the time.  I used my small roasting oven and combined the spices with a little olive oil to help distribute the spices more evenly.

  • 1 garlic clove, minced
  • 2 teaspoons dried marjoram
  • 1 teaspoon salt
  • 1 teaspoon rubbed sage
  • 1 (4 pound) boneless pork loin roast
  • Combine the seasonings; rub over roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 350 degrees F for 1 hour and 20 minutes or until a meat thermometer reads 145 degrees F. Let stand for 10-15 minutes (thermometer should read 160) before slicing.

    You could pair this with steamed carrots, apple sauce or a crunchy green salad. Don’t forget to serve with a large glass of Organic Valley milk.
