It is cold and sunny here in Minnesota, but as I type this the newscasters are chatting about the Super Storm heading toward the East Coast. The combination of hurricane Sandy and a strong Canadian cold front are not looking pretty.
So, if you are stuck in the path of the storm that is expected to drop 1-2 feet of snow in Kentucky, I have the recipe for you. Beef and barely soup should keep you warm, and you might have most of the ingredients in your pantry.
Beef and Barely Soup Recipe
- 1 pound Zweber Farms ground beef
- 2 carrots peeled and sliced in rounds
- 2 celery ribs chopped
- 1 small onion chopped
- 1 large can tomatoes
- 3/4 cup barley
- 5 cups water
- 2 beef boulion cubes
- 1 bay leaf
- 1 tsp basil
- Salt and pepper to taste
Brown the beef in a dutch oven with the onion. Add the rest of the ingredients and bring to boil. Turn to low and simmer for 1 hour.
Remove the bay leaf and serve. I served this dish with hot out of the oven corn bread.
So if you are in the path of this super storm or if you are getting a little chilled like we are in the Midwest, this easy beef and barely soup should warm you right up.
