This week I am painting Hannah’s room and our kitchen. I am also traveling a bit for work. That means no time for new blog posts. I am re-posting my taco seasoning recipe because frankly tacos are the easiest and quickest healthy meal I can come up with. Perfect for busy weeks like this one.
Taco Seasoning Recipe: Re-post from February 28, 2011
I usually try to plan all our meals at least a week in advance, but there is always one night that something doesn’t go as planned and I need a quick, healthy meal. My go to meal is tacos. I usually have plenty of items around to use as toppings and of course ground beef is never in short supply around here (if you need to order, give us a call). I have started making my own taco seasoning to cut the salt and others “extras” I don’t want to be feeding my family.
Emily’s Taco Seasoning: You can adjust all these ingredients to your family’s taste.
- 1 tablespoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 1/2 teaspoons ground cumin
- 1 teaspoon sea salt
- 1 teaspoon black pepper
Mix all the ingredients together and store in an airtight container. This recipe will be enough for 2 lbs of taco meat.
Brown 1-2 lbs Zweber Farms ground beef
Add, 3 tablespoons and 2/3 cup water to each 1 lbs of beef. Simmer 5-7 minutes
Assemble your toppings of choice (didn’t have any tomatoes last night)
We like to saute green peppers in butter
Serve and enjoy with a large glass of Organic Valley milk. Our kids love making their own tacos and will even add veggie toppings they don’t normally eat. Our two year old likes to eat a nacho instead of a soft shell taco because it is easier for him to handle.
