Tim has told me for months to share my curry recipe. I have been hesitant because I don’t actually have a recipe. I change the spices nearly every time and I don’t measure. But since this isn’t a food blog where the recipes need to be perfect, I’ll share my concept and you can make it as your own.
Zweber Farms Pork Curry Recipe
- Sauté some diced onion and garlic in olive oil.
- Add sliced Zweber Farms Farmers’ Sausage. You can make it more smoky using Zweber Farms Kielbasa or make it more spicy by using Zweber Farms Andouille.
- Add a generous amount of curry powder. Add other spices to fit your mood: cumin, tumeric chili powder, nutmeg, garlic, etc. I like to add a bit of chili paste if I want to boost the heat.
- Cook the spices and sausage until the sausage browns.
- Add a can of diced tomatoes, add some sliced sweet pepper
- Add a can of coconut milk
- I like to add diced spinach or kale at the end to increase the veggies.
Serve with rice or Naan. I also like to serve over mixed greens.

Farm Up-Dates
“I bet you are busy this time of year,” we hear from many well meaning customers and acquaintances. They are of course referring to the hustle of fall harvest happening on many farms. Being grassfed cattle farmers means that we don’t raise any corn or soybeans for our cattle. All of the grains we feed our pigs and chickens are raised and harvested on other NonGMO farms. All of our crops, grasses and forages, are harvested basically non-stop since Memorial Day weekend until the end of September. Once the first hard frost hits, we are done. So fall is “relaxing” for us.
Ha! Just kidding. We might not be out in the combine but we have our own type of fall hustle. This is the time of year that I call “concrete” season. Its the time of year where we work on fixing and building things and that involved concrete. This year we are reconfiguring one of our group calf pens to have heated waters (THANK THE LORD), building an area dedicated to Max the pony, and getting a new chicken barn set up. Tim has also been busy fixing water ways to rebuild cattle walking lanes and preparing for the amount of roofline and asphalt runoff eighty houses will be dumping onto our property. The land adjacent to our southern property is being developed. Hello new neighbors!

In addition to the projects, we also have the normal fall things going on: bringing heifers and steers home from their summer pastures, moving hens off of pasture and into their winter homes, and blowing out water lines so they don’t freeze.
We are a winter loving family and already are preparing out skis and snowboards, but we need to get these few projects done before the real snow flies. We had a few flakes last weekend, but nothing to stop projects. I have also been busy in the kitchen canning, freezing and dehydrating the last of the apples and garden produce.
The kids have been busy too. Erik moved to Vermont to start his new job with a family owned fencing company. Jonnie has been busy with FFA contests and National FFA Convention. Hannah has been busy with a great rookie cross country season, earning her Rookie of the Year for her school. She also took a few days to show at the World Dairy Expo.
