The garden at the Zweber Farm is exploding with tomatoes, peppers, carrots, zucchini, and potatoes. We also have three apple trees that have so many apples, one has branches that are breaking off.
Last night I sat down to write a blog about all the cool dairy related events at the state fair, but my computer was acting funny. I took it as a sign to cut up those apples I picked and make an apple pie.
Double-Crust Apple Pie
- 2.75 cups all purpose flour
- .75 cups Organic Valley butter plus 1 tbsp
- about 6 tbsp cold water
- 2 lbs apples (peeled, cored and sliced)
- juice of 1 lemon
- 6 tbsp granulate sugar
- 1.5 tbsp corn starch
- For Glaze: 1 tbsp Organic Valley Milk and 1 tbsp granulated sugar
- Place the flour in a large bowl. Cut the .75 cups butter into cubes and add these to the flour.
- Cut the butter into the flour with your fingertips until it resembles bread crumbs.
- Add the water and mix with a knife until the mixture just begins to hold together.
- Gather the dough into a rough ball and wrap in plastic wrap. Refrigerate for 30 minutes.
- Lightly flour your work surface. Cut the dough into two pieces.
- Roll out one piece to fit into the bottom of your pan with 1 inch of crust over lapping the lip.
- Mix apples, lemon juice, and corn starch. Add mixture to bottom crust.
- Dot with additional butter.
- Roll out second crust and place over filling.
- Pinch crusts together.
- Mix gaze ingredients together and brush on top crust.
- Bake in 425 degree oven for 15 minutes.
- Reduce heat to 350 and bake for 30-35 minutes.
You can enjoy this pie with some Organic Valley whipping cream or some Stonyfield ice cream. Either way you will supporting Organic Valley farmers.
