Hunk of Meat Monday-Roasted Chicken with Artichoke Hearts

My friend Nicole just moved into a new home and yesterday when I went to visit her I brought her some eggs and a whole chicken as a house warming gift. Now Nicole is one of my friends who doesn’t cook, good thing her boyfriend is a chef.

She was asking me how to cook the chicken and I thought of this simple recipe. So Nicole this easy and healthy recipe is for you. You can also find it on our recipe page.

I love that it was a Zweber chicken. Not that I ever want to butcher another chicken for as long as I live, but the idea that I could still makes me proud! The kids and I love artichokes. The hubby tolerates them:)

I don’t want to butcher another one either. We have our 900 chickens done at a properly inspected butcher. 🙂

We will bring you some tasty Zweber Farms chicken the next time we are in North Dakota. Or just stop in this winter between basketball games in the Twin Cities. PS your comment showed up as spam again. 🙁
